sun

a southwest exposure ensures that the groves enjoy the sun’s rays from dawn to dusk, with limited rainfall throughout the year: the perfect setting for the development and ripening of a typically Mediterranean cultivation.

sea

the mitigating influence of the Adriatic sea only a few hundred metres away, guarantees a mild climate even during winter months and the salty sea breeze enhances the oil with distant flavours.

soil

the red Istrian soil, rich in chalk, clay, calcium and iron, offers an adequate balance of rich and poor substrates especially during summer droughts.

wind

the gusts from the Bora, which alternately blows in land and from the sea, provide constant ventilation and create an ideal microclimate for balanced growth and development of the plants.

Istria is located in this typically Mediterranean context and forms one of the northern most areas dedicated to the cultivation of olives. An extreme yet privileged geographical position which, during the oil accumulation phase of the olive (oil production), allows the processing of fine elements such as oelic acid in very high percentages (75%) – a significantly higher percentage than is achieved in other Mediterranean areas – thus lending added value and a uniqueness to our product.
